The issue with fresh herbs is that even though they can make a dish from mediocre to wonderful, there is no simple way of storing them for as long as they’re needed. Especially since herbs are usually sold in bunches and only a small part of them is used in cooking.
Instead of setting them aside in the fridge hoping that you get to use them all before them going bad, try chopping them up and freezing them in olive oil. That way, there will always be fresh herbs in the fridge ready to get cooked.
